Oatmeal Chocolate Chip Banana Bread

With everything going on in the world, I decided it was time for me to start baking. What’s better than a (somewhat) healthy banana bread to start with?

There’s no butter in this recipe AND it’s seriously so easy. ENJOY!

WHAT YOU NEED:

1 cup old fashioned oats

1/2 cup brown sugar

1 1/4 cups of all purpose flour

1/2 tsp. baking soda

1/4 tsp. baking powder

1/2 tsp. kosher salt

1/2 tsp. ground cinnamon

1 tsp. pure vanilla extract

3 tbsp. cooking oil of your choice

4 medium, ripe bananas (cut into chunks)

2 large eggs

1/2 cup chocolate chips or to your liking (I like a lot)

WHAT TO DO:

  1. Start by preheating your oven to 350 degrees F. Then spray your 9” nonstick loaf pan with cooking spray and set it aside.

  2. In a blender, add the old fashioned oats. Pulse until the oats are half their original size.

  3. Then add in the flour, salt, brown sugar, cinnamon, baking powder, and baking soda. Pulse to mix. and dump the dry mixture into a large bowl.

  4. Put the banana chunks into the blender and pulse until smooth.

  5. Then add in the eggs, oil, and vanilla. Pulse to mix.

  6. Pour the wet mixture into the same bowl as the dry mixture and fold it in until combined. Then fold in the chocolate chips.

  7. Pour into the prepared pan and bake for 45 minutes. Cool in the pan for about 10 minutes and wrap with foil to store.
